Fenugreek  Seeds (methi dana ) – 1 teaspoon
Nigella seeds ( kalonji) – 1 teaspoon
Mustard seeds  (Rai) –1 tablespoon.

Wash the Chicken before Cooking

Before preparing Achar Gosht, wash the chicken (or beef/mutton) thoroughly to remove any blood. Cut it into small pieces and place them in a strainer so that excess water drains out.

Step-wise Cooking method

Step 1: Prepare the Achar Masala

First, prepare the achar gosht spice mix. Take coriander seeds, cumin seeds, fennel seeds, fenugreek seeds (methi dana), nigella seeds (kalonji), and mustard seeds (rai) and grind them coarsely. You can use a grinder, mixture, or even a traditional stone grinder (sil-batta) for this. Set it aside.

Step 2: Fry the Onions

In a deep pan, heat some cooking oil. Once hot, add ginger-garlic paste and saute for about 1 minute. Then add finely chopped onions and cook until they turn golden brown.

Step 3: Add the Chicken

Now add the chicken pieces (small cuts) to the browned onions. Fry until the chicken changes its colour. Add chopped tomatoes, cover the pan with a lid, and let the tomatoes soften completely.

Step 4: Add Basic Spices

Once the tomatoes are soft, add salt, red chilli powder, and turmeric. Mix well and fry the chicken. If the meat feels too tough, add a little water and cook on medium flame until tender.

Step 5: Add the Achar Masala

Now add the prepared achar masala and fry again. This enhances the flavour and gives the dish its signature tangy-spicy taste.

Step 6: Add Yogurt

Pour in whisked yogurt and stir continuously to avoid curdling. Cover and let it cook on low flame for about 10 minutes so the flavours blend together.

Step 7: Garnish and Serve

Once done, remove from heat and garnish with finely chopped green chillies and fresh coriander leaves.
