Nothing beats the aroma of Spicy Tehri Pakistani style. Tehri is a traditional, fragrant, and simple yet extremely delicious dish that is eaten with gusto in every household in Pakistan. It is my most favourite and mouthwatering dish. In this recipe, we will tell you step by step all the methods, tips and little secrets that will help you make exactly the same delicious tahri at home.

Main Ingredients:

  • Basmati rice – 1 kg (wash and soaked for 20 minutes)
  • Onions – 2 medium size (chopped)
  • Potatoes – 3 -4 medium size (peeled and cubed)
  • Tomatoes – 2 medium size (chopped)
  • Green chillies – 3 – 4 (chopped)
  • Yogurt – ½ cup 
  • Oil – 1 cup

Spices:

  • Salt (adjust to taste)
  • Red chilli powder – 1 tsp
  • Coriander powder – 1 tsp
  • Cumin seeds – 1 tsp
  • Bay leaves – 2
  • Cloves – 2 – 3
  • Cinnamon stick – 1
  • Black peppercorns – 2 – 3

Detailed recipe of tehri 

Wash and soaked the rice 

First, wash the rice properly and soak them for at least 30 minutes before cooking. 

Preparation before cooking 

Wash and cut all the vegetables like chopped onions,tomatoes, and green chillies, and peeled the potatoes and cut into cubes. 

Fry the Onions 

Take a deep pot, heat the oil and add onions. Fry the onions on high flame until the onions are golden brown. This step built the rich flavour of tehri.

Add vegetables 

Add potatoes into the fried onions and cook for at least 5 – 10 minutes. Then add chopped tomatoes and green chillies and stir continuously until the tomatoes become soft. 

Add Spices and yogurt

After that, add all the spices like salt, red chilli powder, coriander powder, cumin seeds, and black peppercorn. Mix well because the potatoes are coated with all the spices. Add the yogurt and cover the pot in 5 – 10 minutes. 

Add water and Boil 

Now remove the lid,add required water and let it start boiling. Taste the salt and adjust to your taste. Once it starts boiling, add the soaked rice and stir gently. 

Cook the Rice 

Cook the rice on medium flame until rice absorbs the water and tiny holes appear on top. 

 Put on Dum 

Lower the flame, cover the pot with a tight lid and let it steam (dum) for 10 – 15 minutes. This step helps the rice and potatoes become tender. 

Serve for lunch

Now turn off the flame and let it rest for  5 minutes. Your Homemade yellow rice Tehri is ready to serve. Serve hot with raita and salad.
